2015 12-20: Here's a proof of concept for an option select in Street Fighter V. Input a cancelable crush counter normal, like Dhalsim back+hp, and then input first the move you want to cancel into if there's no counterhit, then immediately input the move you want to cancel into if there is a counterhit. Check the inputs on the right side to see the timing! Obviously it doesn't seem useful for Sim to do flame here, but again, this is just a proof of concept.
