The method to this is to simply hurt him during the "chase" section within the narrow path until his eye turns reddish (03:10) as he's absolutely easy to bait and dodge attacks there, and he's a lot more open to your attacks, too. Dodging him down where the crane is is really stupid and I didn't see any guides showcasing just hurting him up here.
All damage you deal during that first part carries over, so before jumping down, either hurt him enough until the big eye turns red or until you think it's close to the point where you can bring it to red within a few shots when you both jump down.
