As I thought, Hard Mode adds some new behaviors but mostly relies on inflating enemy HP to co-op mode style. Which means that the game relies more on the item system, but makes certain moves like the Thunder Jutsu much less useful. So the game is less like the original, turning into a boring game for weirdos.
Sadly, Hayate is still a much better character than Kaede in this demo. I saw a few segments in the trailers where you have straightaways where you can't necessarily jump, but again it makes me wonder how Shinobi Step plays into that.
