It's a bit tricky and takes some practice but in this video you'll see how to actually do it. You won't see the achievements being unlocked because Fraps doesn't record that and I already had them unlocked at the time I shot the video.

For "Up and Up" you need to double jump the spring without landing.
For "Sky's the limit" you'll need to triple jump the spring without landing.
And if you're lucky you can also unlock the "Need for Speed" achievement by fumbling around with the spring.
