Sonic 3 & Knuckles Part 8: Flying Battery Zone (Hyper Sonic & Tails)
At the end of Mushroom Hill, Eggman boards an airship, the successor to his Wing Fortress: Flying Battery. Sonic & Tails follows him in.
There aren't a lot of Special Stage rings here, especially when compared to Mushroom Hill. There's at least 2 in Act 1, and 1 out of 2 I can find in Act 2.
While Sonic traveled through the exterior of the Wing Fortress before, he now travels through the interior and the exterior of the Flying Battery more often. Flying Battery is also a factory of the Egg Capsules that Eggman uses to trap those poor little animals inside of.
A couple of them do contain the animals, while others either release rings, Badniks, or are decoy springs. The last Egg Capsule of Act 1 is the Act's boss. You kill it by letting it hit itself 6 times. If your Super/Hyper, this is without a doubt the easiest boss in the entire game, because then you won't even have to move off of the button, even if its final fatal hit lands.

Act 2's boss is a two-parter. First, Eggman reenacts the match Sonic had with him on Wing Fortress, with a couple changes.
First, unless you're Super/Hyper Sonic or Tails, the ceiling laser is out of your reach. Even if you do reach it, it can't be destroyed this time. You can make a game out of this by hitting it as much as you can before the battle ends.
Second, the walls between Sonic close in on him with each laser blast. Unfortunately for Eggman, he didn't realize that trying to blast Sonic from above would mean that his airship would get blasted constantly by the laser.
So basically just endure that battle until Eggman flees and the Flying Battery starts shaking apart. Then chase him into the sky for the real Act 2 boss. He's mainly out of your reach, attacking you from below with fire from the top of his mobile's head. Wait until he swings up towards you to hit him.
When you're done, Sonic & Tails leave out of Flying Battery by busting a door down and out of the sky.

The Flying Battery itself may have reappeared in the console version of Sonic Generations, as a large, red airship is terrorizing the land of Spagonia in Sonic Unleashed's Rooftop Run.
While the original version is orange, the red recolor must be part of its upgrade. It matches Eggman's red clothes, anyway.

From what I gathered, Icecap was originally going to take place after Flying Battery instead of Sandopolis. A hack known as Sonic 3 Complete takes this to its logical conclusion, and lets you play through Flying Battery during the nighttime after completing Carnival Night before you go to Icecap.
Because of this, completing Mushroom Hill later on will take Sonic straight to Sandopolis by riding a powerful air current at the very end, instead.
