Just do a Long Jump into the same area as the video shows. Originally you couldn't catch Star Bits after they were shot. In the Red Star Mission, you can regroup Star Bits by spinning. They did not intend to also get them after being shot. They were going to remove this in the final game but kept it. This works in the mission and the Hub.
