I revisited the 3D Visualization I implemented into the Track Editor and made the camera follow the players! This way, I can almost play Mario Kart Double Dash without looking at Dolphin.

If you have Windows, Dolphin and a US version of MKDD, you can do this too.

When you have MKDD running in Dolphin, you can start the editor, have it hook into Dolphin with Misc - Hook Into Dolphin and then you can make it follow a player with Follow Player 1-8. In 3D Mode you get the third-person view.
