Use Nintendo Switch with eye tracking through Mill Mouse and the Titan One adapter. You also need an hdmi capture card to view the console content on your computer screen. You can also use voice commands and switches through a usb or bluetooth switch interface in Mill Mouse. This also works with modern Playstation and Xbox, although you have a wireless option with Remote Play on those systems. PS3 and Xbox 360 is also supported by Titan One so this should work with these as well.
