Pura Vida Waffles* with Tropical Compote
Ingredients:
2 cups of rolled oats
1 cup of mashed bananas (about two medium)
1 1/2 cups plant-based milk
1 tsp. baking powder
1 tsp. vanilla
Compote:
2 mangos, peeled and chopped (can use frozen)
2 Tbs. water
1 sliced banana
1 cup cubed fresh papaya
Coconut shreds for top
Put oats in a blender and blend for 30 seconds until a fine flour forms. Put remaining waffle ingredients in a blender and blend until smooth. Let sit for five minutes to thicken while you cook your compote.
When the blender mixture is thickened, pour 1/2 cup onto hot non-stick waffle iron and cook until steam reduces. Carefully remove from the iron. Waffles can be kept warm in the oven where they will crisp up.
To make the compote, simply put the mangos and water into a blender until pureed. Pour into a bowl with the sliced banana and papaya and top with the coconut shreds. Top waffles with the compote and sprinkle coconut shreds on top. Pura vida!
