Hey friends! I really want to start doing more WEEK IN MY LIFE videos so get excited! I feel like our life is a bit boring right now with Ontario still being in somewhat of a lockdown, but with warm weather coming I feel like we can do some fun stuff. Filipino Yellow Curry Chicken Recipe! ♡
- 4 chicken legs
- 2 tbsp yellow curry (mix with 1/2 cup water to make a paste)
- 1 can coconut milk
- 1 yellow onion quartered
- 1 green pepper chopped
- 1 carrot chopped
- 2 medium potatoes chopped
- salt & pepper
Saute onion in oil until soft. Add curry mixture and cook for 3 minutes. Add chicken pieces and cook until chicken is almost fully cooked. Once almost cooked, add coconut milk and half the can of water. Stir to combine. Add chopped carrot and potatoes as well as salt and pepper to taste. Stir and cook until vegetables are somewhat softened. Once the vegetables are almost done add the green pepper and cook until they are softened as well. You can add the green pepper when you add the carrot and potatoes but we find the green pepper will be soft quicker then the other vegetables so we add it later. Cook the rice on the side and serve once all vegetables are to your preferred softness. ENJOY!
