An update on the first video with a fix for the majority of the issues 21:9 natively has.

Mod:
Go here C:\Users\%username%\Documents\My Games\XCOM2\XComGame\Config

Then find the file called XComEngine.ini

Now find the line called [Engine.LocalPlayer]

and under that is a single line which reads
AspectRatioAxisConstraint=AspectRatio_MaintainXFOV

You want to change that to
AspectRatioAxisConstraint=AspectRatio_MaintainYFOV

Now save the file and close it and you are good to go :)
