Found this last night. I haven't played in about a year, so it may have been previously found, but it's new to me and I found it so here it is.

You can assign the name "You" to your Sparrow by flipping it, blocking with a sword, and riding it.

To "ride" a flipped sparrow, simply back away, crouch, and approach it slowly from behind. (teehee)

The name "You" only appears on your Sparrow for as long as you're looking at it. As soon as you look away, "You" goes away.

It also gives the Sparrow a health bar, which is weird.
