The Bear Tartare 8.0 nerf is the most egregious to me personally- I can understand not wanting a Legion crafted consumable to be continually useful for farming old content, but with no Bear Tartare (or Fighter Chow) replacement coming to WoW in Battle for Azeroth it's the end of an old content farming era. Old content farming will be additionally affected in 8.0 by the stat squish as well as Legacy Loot Mode- so going will be slower, but you'll get more gear from each run! The 8.0 stat squish definitely affects running old content in the 8.0 prepatch and BfA, but it's not totally undoable and will get easier with ten levels of power in Battle for Azeroth.
The Pet Charm Change in 8.0 will turn your Pet Charms into Shiny Pet Charms, making them only usable to purchase Legion and earlier pets and toys! Spend your Pet Charms on upgrade stones BEFORE THE 8.0 PREPATCH if that is your plan. Gold making is also affected in the 8.0 Battle for Azeroth prepatch- combat follower gold and missions gold are both taking a hit. Gold from Legion World Quests is being nerfed at BfA launch, but not in 8.0 so you're good there during the Patch 8.0 timeframe.
Patch 8.0 is bringing a variety of combat changes including all of the BfA class changes (see linked Wowhead article above), things moving onto the GCD, 8.0 Racial nerfs to Arcane Torrent and Every Man for Himself.
Miscellaneous Patch 8.0 nerfs inculude the removal of Full Screen mode from WoW (you can play in Borderless, or Windowed Fullscreen but expect potential FPS drops if you were in Fullscreen previously) and some Pet Battle balance changes, specifically shaking up the moveset of the Teroclaw Hatchling.
