A lady cooking Coconut Pancakes to sell at the floating market Ayothaya Thailand
There’s so many famous Thai main meals that desserts sometimes get over looked. But there are also many amazing Thai desserts.
Coconut pancakes are actually a very old traditional Thai dessert. I have cooked mine on a hot plate but in former times they would have been cooked on a metal plate laid over hot charcoal.
When I say dessert, you are just as likely to see Thai people eating these pancakes with their morning coffee. The word kanom means snack.
This style of pancake is usually only made with young coconut so I hope you can get your hands on some fresh, young coconut flesh.
Other than that there’s only a few other ingredients. Here’s what you will need and make Kanon Babin Maprow Aon as we call the pancakes in Thailand.
INGREDIENTS
-230g young coconut flesh
-120g glutinous rice flour
-70g sugar
-Pinch of salt
-100ml coconut milk
-1 tbsp butter
Method
1. Mix the flour with the sugar and salt. Then mix in the coconut milk.
2. Add the coconut flesh and mix well.
3.Heat an electric hotplate. You could use a non-stick frying pan instead. Smear the butter around the plate or frying pan so the pancakes do not stick.
4. Place two tablespoons of the mixture at a time to form the small pancakes.
5. Turn as they start to brown.
