This is a true, authentic recipe for Breath of the Wild's Monster Stew. Instead of Monster Extract, we can use a combination of Shaoxing wine and Shrimp Paste.

Ingredients:
Dashi Stock (soaked overnight)
* 6 Cups Water
* 14g Kombu
* 4 Dried Shiitake Mushrooms

1 lb. Pork Belly
Ginger (for blanching pork)
2 Cups Shaoxing Wine (divided evenly for blanching, rest for stew)
5 Tbsp. Lemongrass
Minced Garlic
Sliced Shallots
3 Tbsp. Shrimp Paste
3 Tbsp. Sugar
1 lb. Salmon
