Render Engine is the standard bedrock game engine. Render Engine PBR is a preview of what's coming for creators. And Ray Tracing is actual tracing of rays with real shadows, reflections and lighting effects.
Of course, the Ray tracing looks overall best, it performs the worst. In some areas the PBR version looks pretty great, although it comes at the expense of less visibility, but the FPS stays good.
