Pros:

Wonderfully Dark, Gothic, and Thrilling Setting.
Excellent Soundtrack.
Redone Combat, Weapon System, No Useless Items and Gear, and Redone Co-Op / PVP Mechanics.
Simplified Upgrade / Stat allocation system.
New Password System allows for Easier Co-Op with friends.
All Boss Battles are fucking Legit.
EXTRA OPTIONAL BOSSES AND ENVIRONMENTS!!
Chalice Dungeons provide extra longevity and hidden items!!
Lot's of balancing changes in general compared to previous Souls games.

Cons:

NPC Development is way to quick.
Not as many builds as previous Souls games.
Chalice dungeons are cool, but only serve as a mild distraction.
Lot's of the changes might turn some veterans away, as creativity is a large part of the Souls Franchise.
Long loading. (Being addressed in 1.03)
Frame Rate Dips and skipping. (Being addressed in 1.03)
Some rare Audio skipping. (Being addressed in 1.03)
