Here is the Single Player Mode on the Hard Difficulty Setting. Supposedly the AIs are tougher to go up against I guess in Hard Mode. Honestly, I think it just ups the frequency of being challenged by the AIs to more Mini-Games compared to Easy Mode and maybe make some key items on Stages 2, 3, and 5 appear on squares that have to be flipped over. This was the first part of the Adventure where it reached up to the mid part of the Stage 3 Viscount Mini-Game due to how I might have clicked outside of the emulator and ended the gamebar recording.
