Ingredients for Crispy Shrimp Sandwich, makes 3 or 4

Shrimp Patty
20 (400g/0.88lb) deveined and shelled Black Tiger Shrimp
1 (30g) large egg white
1 tablespoon (10g) potato starch
1 tablespoon (13g/15ml) sake
salt/pepper

Batter
1 large egg *please double if you're making 4
5 tablespoon (50g) potato starch *please double if you're making 4
1 cup panko

Extras
Parchment paper, for forming patties
Cooking oil, for frying
Salt, for after frying
Bread, lettuce, kewpie mayo, for sandwich assembly

Instructions
1. Divide your shrimp into half: mince one half into a paste, and chop the other half into small pieces
2. Place your shrimp into a bowl, then combine it with egg white, potato starch, sake, salt and pepper
3. Divide your shrimp batter into 3 or 4 patties, then form them on a parchment paper. Around 2.5 in x 2 in rectangles (or how ever you want it to fit in your sandwich)
4. Place formed patties into the freezer until frozen for easier handling
5. Prepare the egg glue by mixing a whole egg and potato starch, then fully cover your frozen shrimp patty with it
6. Next, press panko onto it
7. Once the patties are close to room temperature, deep fry patties at 350F: 4 1/2 minutes if you've divided your shrimp batter into 4 patties, and 5~5 1/2 minutes if you've divided into 3 (since they're thicker)
8. Once fully cooked and browned, remove from the oil and place on a wire rack. Season with salt immediately
9. Assemble sandwich

Notes
- You can freeze this and make it the next day (after applying panko to the shrimp patty), but make sure it is close to room temperature before frying, and not frozen
- You can substitute potato starch for corn starch
- In this video I made 3 patties, but here is how it looks if you divide the batter into 4. It makes for little mini sandwiches
- You can add spices to the patty: I tried to use cayenne and garlic powder before but the result of the cooked patty doesn't have the same white sheen that made it look delicious :( So use at your discretion
