- 1 tablespoon olive oil
- 1/2 cup red onion
- 1/4 cup leek
- 4 cloves garlic
- 1 can (800ml) whole peeled tomato
- 1/2 teaspoon cayenne
- 1/2 tablespoon sugar
- salt and pepper
- 400ml vegetable stock
- 200g yellow potato
- 150g mixed mushrooms
- fresh parsley and dill
- 1 tablespoon fresh cream (heavy cream or coconut milk works)

Instructions
1. Heat up olive oil in a deep pot, then add red onions and leek. Sauté until translucent ~2 min. Then add garlic and sauté until fragrant, followed by the whole peeled tomatoes.
2. Add cayenne, sugar, salt and pepper and simmer veggies for ~25 minutes.
3. Blitz, strain, and add back into the pot.
4. Add yellow potatoes, mixed mushrooms, fresh parsley and dill, and simmer until potatoes are tender ~15-20 minutes.
5. Finish with more fresh herbs and cream, and enjoy!

Notes
Please be careful when blending hot liquids, make sure there is a space for heat to escape for traditional blenders, or don't fill up your liquids all the way for nutribullets. Safest way if you're not sure is to wait until your soup is room temperature before blitzing, or use a handheld food processor (like in the video)
