Breaded Chicken
2 chicken breast, pounded to 1 inch thickness
Salt pepper
1/2c (120ml) water
1/2 cup (60g) all purpose flour
1/4 teaspoon salt
1 1/2 cup Panko breadcrumbs
2 inch depth of oil, heated to 335-345F
1. Sprinkle salt and pepper on the chicken
2. Make the batter by combining water, all purpose flour, and 1/4 teaspoon salt
3. Cover the chicken with batter, then cover with Panko bread crumbs
4. Cook in heated oil for around 3-4 minutes per side, or until golden brown, and the instant read thermometer when inserted in the centre reads 165F
5. Remove from oil place onto a drying rack. While hot sprinkle a pinch of salt on each chicken
6. Let rest for 5 minutes, then place on a cutting board and cut into 5 equal pieces per chicken

Caramelized Onions in Red Wine
2 tablespoons (30ml) olive oil
1 large red onions, sliced into 1/2 inch thickness
1/2 cup (120ml) red wine
1/2 cup (120ml) chicken stock
1 tablespoon soy sauce

1. On medium heat, cook olive oil and onions until softened, and caramelized, around 8 minutes, stirring occasionally
2. Add red wine, and let cook for 5 minutes, or until bubbles die down. Add chicken stock, and soy sauce and cook until sauce thickens, around 10 mins

Note: When making this usually the onions should be cooked longer to become jammy and caramelized, but the rendition on the anime makes the onions look hard and not cooked for a long time
