The Dragon Ball FighterZ Open Beta defaults to JAPANESE; but if you go to the 'Sound & Language' menu in the Options Menu of the Hub World you'll be able to change the audio language from JAPANESE to ENGLISH.

This means all of the characters will speak in English (with the FUNimation voice actors) as opposed to the original Japanese voice actors.
