HOMEMADE BABAGANOUSH

This is our fave dip to make at home, its super easy and tastes good with everything! Depending on your background, this might be known as mutabal instead 😊 It’s also vegan which is good to know!

Ingredients:
6 skinny eggplants
1 tbsp tahini
3 minced garlic cloves
olive oil
lemon juice
smoked paprika
salt
pepper

Method:
- Rub the eggplants in olive oil and salt, prick the skins and bake for 50 mins and 180 degrees (fan forced)
- Let the eggplants cool a bit, then wrap in cling wrap and cut off the bottom
- SQUEEZE the insides into a bowl, and mash with a fork
- Add tahini, garlic, olive oil, lemon juice, smoked paprika, salt and pepper to the bowl
- MIX until combined
- Top with extra olive oil and smoked paprika, serve with pickles and bread!

Notes:
🍆 Usually you would use tahini but all we had was Chinese sesame paste so we used that instead!
🍆 For the olive oil, lemon juice, smoked paprika, salt and pepper there’s really no specific measurements - add a bit to start off with and then adjust to your liking!
