Eggnog pancakes!
2,401What would happen if you made American style pancakes with eggnog in the actual batter... well the answer is in this video! A super fluffy, festive spice infused, creamy pancake stack served alongside maple syrup and bacon, this was outstanding! The fresh homemade eggnog alone was amazing, but to carry that forward into pancakes really made this a super festive idea!

Ingredients:
For the eggnog (makes 3 litres)
6 eggs, separated
150g caster sugar, separated into 100g & 50g respectively
450ml milk
450ml double cream
300ml dark rum
1tsp nutmeg, grated from a whole nutmeg
freshly grated nutmeg, to taste
For the pancakes
280g plain flour
1.5tbsp baking powder
Pinch salt
1tsp nutmeg, grated from a whole nutmeg
550ml eggnog
2 eggs
40g butter , melted
Oil for frying
Smoked bacon rashers, cooked to your liking & Maple syrup to serve
