Yay! On my very last Rune Arc too. Black Knife Tiche and the Fingerprint Shield worked well for this! You get her ashes from doing the Ringleader's Evergaol (https://youtu.be/rUx_zQKljdk) and the shield is in the area between Cathedral of the Forsaken and the Frenzied Flame Proscription (https://youtu.be/h7dTMqGrsiM). She can do insane damage really fast and the shield is good against lightning and especially Holy.

I really prefer the first fight just because fighting a humanoid god is super epic, plus Radagon is a character we've been hearing about throughout the whole game. The Elden Beast's moves are cool, and I like the shattering effect as you beat it up, but it's appearance is just kind of...blah imo. I like it when bosses have a lot of details to look at. Wait...maybe the Godskin guys stole it's skin lol!
