The defense priority list is:

Evade- Don't be there when the attack lands. Deceptively simple, yet highly effective.

Sidestep- Also known as slipping or weaving attacks. Like evade but right there on the spot.

Dodge- Use stamina to move out of the way. This gives invincibility for a few frames of motion.

Parry- High Risk/High Reward action available with certain equipment.

Block- Use stamina to negate or reduce damage with a shield or weapon.

Tank- Take the damage and heal it back when the opportunity arises.
