To adjust the mic level on your headset for PS5 console, you can follow these steps:

Press the PS button on your controller to access the Quick menu.
Scroll to the right at the bottom of the screen and select the Mic option.
Ensure that the Mic option is set to Wireless Controller.
Select Adjust Mic Level by scrolling to the bottom of the window and clicking on it.

Adjust the mic level to your preference.
If you are using a PSVR 2 headset, you can adjust the mic level by pressing the PS button and then going to the Quick menu. Select Mic and then go to Adjust Mic Level. By default, the mic may be too sensitive. You can reduce this to avoid people hearing you breathe and move around
