Big thanks to Archie from the DayZ Podcast for pointing this one out, something I didn't know was in the game - the improvised Leather Backpack!
You need to hunt and skin an animal, to get it's Pelt - then combine that with Garden Lime to get at least the 2 pieces of leather you'll need to back the bag.
Then combine that leather with a Leather Sewing Kit / Repair Kit & you'll craft the Leather Bag!
