What You Need:
3 egg yolks
3 egg whites
1/2 cup sugar
3 TBL canola oil
1/4 cup orange juice
1/2 tsp vanilla
2/3 cup cake flour
1 tsp baking powder
Pinch of salt
Chocolate glaze:
3/4 cup chocolate chips
1 TBL corn syrup
3 TBL butter
Preheat oven to 340. In a medium bowl, whip egg yolks with 1/3 of your sugar and whisk until light yellow and ribbony. Whisk in oil until combined. Then, add orange juice and vanilla extract. Whisk in flour, baking powder and salt. Set aside and clean your whisk.
In a clean bowl whisk egg whites. Once whites are foamy, slowly sprinkle in sugar while whisking. Beat until you get marshmallow like peaks.
In three increments carefully fold egg whites into egg yolk mixture. Start from the center and fold carefully, beating down the batter every time. Carefully put batter into a 6 or 7 inch chiffon cake pan. Slap down a few times to knock out air bubbles.
Bake for 20-25 minutes or until toothpick inserted comes out clean. Cool upside down using your chiffon cake tongs until totally cool.
To make chocolate glaze: Place all ingredients in a small bowl and melt in 30 second intervals or until smooth. Pour over the cooled cake in a circular motion and allow it to drip down the sauce.
To serve: slice with a serrated knife and serve warm or room temp. Eat within three days.
