What you need:
1 cup dried apricot
1/4 cup apple juice
1/4 cup sugar
1/2 TBL lemon juice
1/2 tsp vanilla
Won ton wrappers
Canola oil, for frying
Red sour straws

Chop dried apricots into small pieces. Set aside in a bowl.

Grab a medium pot and pour in some apple juice, some sugar, some lemon juice and a little vanilla. Bring it to a boil.

Stir in your chopped fruit and cook on low heat until your fruit soaks up the cooking liquid, about five minutes. Place in a small bowl and refrigerate one hour.

To assemble: Put about 1 tsp of your fruit filling into the center of the won ton wrapper and clasp closed by pinching it. It should look like a little pouch (see video for technique). Place all your pouches on a sheet pan until ready to fry.

Bring a small pot of oil up to 360 degrees. Place about four pouches in at a time and fry until golden, about 2-3 minutes. Evacuate to a clean plate and allow to drain.

Once cool, wrap the top with sour red straws. Serve alone or with vanilla ice cream.
