Magic Cream:
2 egg yolk
1/3 cup milk + 2 TBL
1/3 cup sugar
3 TBL raspberry puree
1/2 TBL gelatin
1 cup heavy cream
Pink gel food color, optional
Glitter sugar, to decorate
Cake:
3 eggs
1/2 cup sugar
1/2 cup cake flour
1/2 tsp vanilla extract
For Magic Cream: In a small bowl, mix together gelatin and two tablespoons of milk. Set aside. In a small sauce pan, combine eggs, sugar and the rest of the milk. Whisk and cook on medium heat for a few minutes, just until it becomes warm and starts to thicken. Don’t let it boil. Add your gelatin and turn off the heat. Allow to cool slightly.
In a large bowl, whip your cream to stiff peaks. Add your reserved custard and fold it in. Add raspberry puree and a little gel color if you like. Cover with plastic and allow to cool a few hours until set.
For Cake: Preheat oven to 375 degrees. In the bowl of your stand mixer, combine eggs, sugar and vanilla. Cook over a small pot of hot water whisking constantly until sugar dissolves and mixture is just barely hot to the touch.
Whisk on high speed in your stand mixer until mixture doubles in size or more and reaches the “ribbon stage.” Sift on cake flour and fold it in with a whisk until it’s incorporated.
Pour batter into a parchment lined 8 or 9 inch pan and bake for 8-10 minutes or until toothpick inserted comes out clean. Remove from oven and carefully remove from pan. Allow to cool completely.
To assemble: Take set cream and pipe it onto the top of the cake, leaving 1/4 inch of the edge exposed. Starting from the outside, working in. Once you’ve finished decorating, apply a little glitter sugar using a small brush. Place back into fridge for 20 minutes before slicing. Serve cold. Keep leftovers in the fridge.
