How to Make Apple Risotto from Food Wars! Shokugeki no Soma

For the rice:
1/2 cup arborio rice
3 strips thick cut bacon
1/4 onion, minced
2 TBL butter
1 cup chicken broth
1 cup apple juice
2 TBL apple brandy or wine, optional
2 TBL parmesan cheese or white cheddar, optional
Salt+Pepper to taste
Optional additions:
Pinch of tumeric, optional
1/4 tsp apple cider vinegar, optional
Fresh thyme
The rest:
1 apple, diced
1 teaspoon lemon juice
First, peel, core, and dice your favorite apple. I’m using Fuji, but any sweet apple works. Place it in a bowl and add lemon juice to prevent it from browning and set aside. In a measuring cup, combine apple juice and chicken broth.
For the rice: cook three strips of bacon in the bottom of a dutch oven. Remove the bacon to a clean plate to drain, and use a paper towel to soak up any of the bacon fat from the bottom. Add your butter, your rice, and your onion. Cook on medium heat for five minutes or until the rice and onions are translucent.
Add half of your reserved liquid and bring to a boil. Once it’s boiling, turn heat to low, cover, and cook about 10 minutes or until most of the liquid has been soaked into the rice. Turn heat up to medium and add a little liquid, stirring it in until it is soaked in. You don’t have to stir it too much, but at least every couple minutes or so. Repeat until all liquid has been added and rice is cooked. Stir in parmesan cheese, reserved apples and white pepper to taste. You can use black pepper, but it will be speckled.
Before serving, consider adding the optional stuff, like apple brandy and apple cider vinegar. If it’s not as yellow as you’d like, add a little tumeric until the desired color is achieved. Serve on a plate and garnish with cooked bacon and fresh thyme.
