Crepes:
1 egg
2/3 cup milk
1/2 cup flour
2 TBL sugar
1 1/2 TBL butter, more for coating pan
Pinch of salt
1/2 tsp vanilla extract
Sauce:
1/3 cup sugar
1/4 cup butter
1/3 cup orange juice
1 TBL lemon juice
1 1/2 TBL brandy, optional
To serve:
Ice cream
Orange slice
Fresh mint
For crepes: In a medium bowl, place flour, salt, egg, butter, sugar, vanilla, and half of your milk. Mix until combined and no lumps remain. Then, whisk in the rest of your milk.
Place an 8 inch non-stick pan on medium low. Melt a little butter and spread it around with a wad of paper towel. Add about a 1/4 cup of batter into the pan and swirl it around to form a very thin crepe. Cook until it’s lightly golden around the edges. Then, carefully loosen it around the edges and flip it. Cook another minute or two and remove to cool on a plate. Repeat with the rest of the batter.
Sauce: In the same pan, place sugar and cook over low heat until it’s light blonde. DON’T TOUCH IT, IT WILL BURN. Turn off the heat and add the butter all at once. Then, place back over low heat and add orange juice and lemon juice. Cook over medium heat for about five minutes or until the sauce tightens up a little.
To flambé, optional: Off the heat, add brandy to the sauce. Light with a match and allow the alcohol to burn off. Don’t do this unless you have a fire extinguisher handy.
To assemble: Fold crepes twice into triangles and stack on a plate. Drizzle with sauce, and top with vanilla ice cream, orange slice, and mint. Serve immediately.
