How to Make Frank’s Famous Caesar Chicken With Feta Cheese and Tomatoes

FRANK’S FAMOUS CAESAR CHICKEN WITH FETA CHEESE AND TOMATOES:
Serves 4 people
4 boneless skinless chicken breast
halves (4 ounces each) *I have found that often a regular sized chicken breast will weigh 8 ounces, so all you have to do is slice it in half lengthwise to make two 4-ounce breasts
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons olive oil
1 medium tomato, chopped (I sometimes used canned, diced tomatoes instead)
1/4 cup creamy Caesar salad dressing
1/2 cup crumbled feta cheese
1) Sprinkle chicken with salt and
pepper. In a large skillet, heat oil
over medium-high heat. Brown
chicken on one side. Turn chicken;
carefully add salad dressing and tomatoes on top of each chicken breast. Try to avoid having the dressing and tomatoes fall into the pan. Caesar dressing is usually pretty thick, so it should stay on the chicken breasts. Cover the skillet and cook until a
thermometer inserted in chicken
reads 165° F, about 6-8 minutes. Sprinkle with crumbled feta cheese and serve.
