The Mac lets you set a different volume level for headphones versus speakers and other audio output, and it's super easy to do.

Just plug in your headphones or headset to the audio output port and watch how the Sound Output control panel changes to acknowledge the headphones, then just set the maximum volume level to what you want to be the new default. Easy! You can read an accompanying walkthrough here:
