To stop sound switching to headset when plugged in on PS5 console, you can try the following steps:

Navigate to the Settings menu on your PS5 home screen.
Select Sound and then Audio Output.
Choose HDMI device (TV) as your output device.
Adjust audio output priorities by selecting Settings - Sound - Audio Output - Primary Output Port - HDMI - Output to Headphones - Chat Audio - Do Not Output.

If you’re still having trouble, you can try plugging a USB mic into your PS5, switching the output to TV, turning off “Switch Output Device Automatically”, and muting the mic on the controller.
