2021's ATARI VCS looks like it might make a decent Steam Machine, but the official old SteamOS doesn't *quite* work the way you might like it to and isn't easy to find anymore. The Linux Experiment recently made a SteamOS "console" with HoloISO, but will it work on the VCS?
