My Minecraft resource pack "Barely Default" just updated and today I added custom torch variants to Minecraft! Using OptiFine anvil renames (Custom Item Textures), you can rename various crafting materials to "Sconce" for unique colourful torch variants with just a texturepack (and OptiFine)!
