How to Make Suran/Yam Fry:
Ingrediants:
Chopped Suran/Elephant Yam – ½ Kg
Fresh Coconut Pieces – ¼ Cup
Oil – 3 Spoons
Chopped Green Chillies – 4 to 5
Chopped Onion – 1
Fenugreek Leaves – 1 Spoon
Ginger garlic paste – 1 T Spoon
Turmeric Powder – ½ T Spoon
Red Chilli Powder – 2 Spoons
Salt to Taste (1 Spoon)
Pinch of Garam Masala
Chopped Coriander Leaves – ¼ Cup
Method:- Peal the Yam Chop the Suran/Yam to small pieces, Keep aside, add Fresh Coconut Pieces in to a mix jar, Grind well, keep aside, Place a pan on the flame and add oil, when the oil heated add chopped green chillies & Onions, stir well and fry well, now add fenugreek leaves & ginger garlic paste and stir well, add turmeric Powder and mix well and add Suran/Yam Pieces and stir well, close the lid and cook for 5 minutes in medium flame, fry well and now add coconut powder and mix well, close the lid and cook for 2 minutes in low flame and fry well, keep stirring now add red chilli powder and salt to taste and mix well, add pinch of garam masala and mix well, close the lid and fry for 1 minute in low flame till the pieces are crispy and brown the edges , finally now add coriander leaves and mix well, take out into serving bowl , Taste Suran/Elephant Yam Fry is Ready, serve with rice, roti/Chapati or poori....Thank you.. These are perennial herbaceous vines cultivated for the consumption of their starchy tubers in Africa, Asia, Latin America, the Caribbean and Oceania. There are many cultivars of yam. Although some varieties of sweet potato (Ipomoea batatas) are also called yam in parts of the United States and Canada, sweet potato is not part of the family Dioscoreaceae but belongs in the unrelated morning glory family Convolvulaceae.
Except for potassium, vitamin B6 and vitamin C, yam is a food with moderate nutrient density.[14] Yam provides around 110 calories per 100 grams. It has good levels of potassium, manganese, thiamin and dietary fiber, while being low in saturated fat and sodium. Yam generally has a lower glycemic index, about 54% of glucose per 150 gram serving, compared to potato products.[15]
The African yam (Dioscorea sp) contains thiocyanate; it was suggested in one 1986 paper that potentially it is protective against sickle cell anemia (SCA).[16] The paper points out that SCA is known to be relatively rarer in Africans than in the African-American population of the United States, and suggests that the higher thiocyanate content of the African diet explains the high incidence of SCA among African-Americans and its rarity in Africans.
