So this boss is a little weird. It's extremely easy to straight up beat but doing it with no damage can be tricky. The main issue is the bird, however it's not completely random. From what I can tell, the bird usually attacks shortly before Shan-Yu does and he usually does a specific attack based on what Shan-Yu is about to do. In most cases the bird starts glowing and will change at your trying to grab you. When Shan-Yu powers up and is about to charge at you the bird can instead fly above you and swoop down. However this only sometimes happens because I got really lucky here and he never did that.

Anyway, the main trick here is to just wait for him to attack, block and then mash triangle to push him back. The final hit seems to be a bit random in how far it launches Shan-Yu and will sometimes push him too far away to combo. When you can get in some hits, do 2 3-hit combos and a 4-hit combo for the third. This will hit Shan-Yu's Revenge Value and force out a retaliation, after which the bird will attack followed by him attacking.

Mulan's limit is useful for clearing out enemies so they don't break but it's not super necessary. In the customize menu, changing partners to "Party Attack" will make them prioritize enemies away from Sora's location so they will protect the door themselves for the most part.
