A Little History

Originally, paring knives were used for peeling, but now that we have separate vegetable peelers, paring knives are most commonly used for whittling and trimming.c
Pick a Store
---------------------------------------------------------------------
Go to a store where they will not only let you hold the knives but also have a testing station set up so that you can feel how the knife cuts.
The number one criteria for selecting a knife should be if you like the way it feels in your hand. If it's not comfortable, you won't use it.
Choose a Type
---------------------------------------------------------------------
While paring knives come in different lengths, the most common blade size is three to four inches.
A forged paring knife has a thick hilt, or bolster (the spot between the handle and the blade), but a stamped knife doesn't have any hilt and only a partial metal tang (the part of the blade that extends into the handle).
A bird's beak paring knife is specifically for tournee cuts (shaping vegetables into football-like shapes).
