Equipment: Spice Grinder, large airtight container, whisk, grill, skewers
Ingredients:
Duck
1 teaspoon (2 g) Sichuan peppercorns
h teaspoon (2 g) blackpeppercorns
h teaspoon (g) coriander seeds
2 tablespoons garlic paste
1 tablespoon ginger paste
2 cup 12s ml) soy sauce
2 tablespoons mirin
2 teaspoons sesame oil
2 tablespoons honey
12 pounds (68o g) duck breast, cut into
large bite-size pieces
2 tomatoes, quartered
6 shishito peppers
Wooden skewers
1. In a spice grinder, blend the Sichuan peppercorns, black peppercorns,
and coriander seeds until the peppercorns are finely ground. Transfer
to a large airtight container and whisk in the garlic paste, ginger paste,
soy sauce, mirin, sesame oil, and honey. For the duck breast, you can
leave the skin on, but keep in mind it will be a bit more chewy than
without it. Add the duck breast to the marinade and coat. Cover tightly
and place in the refrigerator and marinate for at least 2 hours and up
to 8 hours.
2. If you are using wooden skewers, soak them in water for 3o minutes
prior to grilling.
3. Preheat the grill to 400°F (24o°C).
4. Place a piece of duck on a skewer. Add a shishito pepper and another
piece of duck. Adda tomato quarter and a final piece of duck. Repeat
until you use all the duck and vegetables.
5. Cook the skewers over the hot side of the grill, flipping to crisp all
sides, until the duck is crisped, 8 to 10 minutes.

Equipment: Medium saucepan, whisk, large pitcher
Simple Lavender Syrup
h cup (100 g) sugar
h cup (85 g) honey
1 Cup (250 ml) water
3 tablespoons dried lavender
Lavender Citrus Juice
h cup (125 ml) lemon juice
2 cup (125 ml) lime juice
Simple lavender syrup
1Cup (250 ml) water
1drop purple food dye, optional
Per X-Potion
1ounce (3o ml) gin
2 0unces (6o ml) Moscato
4 ounces (125 ml) Lavender Citrus Juice
1. In a saucepan over medium-high heat, stir together the sugar, honey,
and water. Once the sugar and honey dissolve, add the dried lavender
and bring to a simmer. Reduce the heat to medium-low and simmer
for 25 minutes. Remove from the heat and let cool.
2. In a large pitcher, mix all the ingredients for lavender citrus juice
together. Place in the refrigerator overnight to chill before serving.
3.Combine all the ingredients in a tall glass. Lightly stir together and serve.
If you don't feel like adding alcohol to this, you can enjoy the lavender citrus juice on its own.
