In OpenXCom, X-Com still await the psionics to be trained and another base to establish itself, so it better get plenty of resources to support them in the near and far future...meaning more battles against supply and scout crafts! In Enemy Unknown, psionics and their mind abilities make for some interesting battle options that could allow riskier playing style and habits (but with greater rewards).
