I realize after making this video the base of the stalks are scaled much larger than the top in real life. It would been easy to select the base of the stalk in edit mode, turned on proportional editing and scaled them larger.
Realized this when making the thumbnail and seeing the game plant compared to the photo.

I only used a basic texture for this but it would be easy to make more layers for PBR materials to give it a more realistic look. I watched the guy from beamng... Mitchell Sahl's video on baking textures in Blender. Its an older video but pretty useful. I did not have good results trying it on my rock I made a couple days ago but I likely was doing something wrong. Basically you bake the texture from a high poly object and apply it to a low poly version but it looks almost the same. Bake is only an option using cycles renderer in Blender.
