Made some Fresh Salsa (Pico de Gallo) and Guacamole today as a 'dip' for some chips as part of dinner. Didn't have tacos nor is it a Tuesday, but these side dips are pretty nutritious and simple to make! I watched many tutorials online and read many websites and this is my process of doing it.
I usually quick pickle both side dips first before inserting the main thing (tomato/avocado). Saw this done in a few online things. Use acid of choice, fresh is nicer.

Very tasty, and not too complex! Make sure the avocados are nicely ripened though.
