One of the hidden stats in Mario Kart 7 is called "DriftStart" and appears to control how much your kart slips when initiating a drift. It has one associated parameter called "OuterSlip". The higher the DriftStart stat is, the lower "OuterSlip" will be.

In this video, I show a comparison between the Slick and the Gold tires, both of which have a DriftStart of 8 and 0 respectively, and an OuterSlip of 0.25 and 0.75 with this particular vehicle combo.
