I don't wish for my name to be on Feedback, I just want to share my idea. Also, I did give this idea to Systemzee, as well. Just to let you know.
Let's say we do get a Cave Update, what sort of New Mob will be added?
I have two ideas: Trolls and Ore Crabs. The Trolls are large, brutal beasts that eat Ores and turn to stone in Sunlight. This Mob would be the reason to make all Ores, even Coal, all the more valuable. Once killed, the Troll would drop one or two of its Tusks, the recent Ores it consumes and sometimes, damaged equipment. When in Stone Form, not only would it die, but it would only be destroyed, via a pickaxe. As for the aforementioned Tusks, they could be used in the Smithing Table to upgrade said pickaxes to mine faster and longer.
Ore Crabs are small, elusive creatures that, as the name implies, disguises themselves as Ores. When in Disguise, it's impossible to tell the difference, unless broken with a Pickaxe. They only attack Mobs with 10 or less HP and Players that are at half health. Therefore, it would run away from Players at max health. Ore Crabs also tend to steal Food from Players, as well as certain Ores. Since they're living Ores, they can only be harmed with a Pickaxe and they will drop the Ore they mimic on death. The strength of an Ore Crab would vary on what ore it mimics. For instance, Diamond and Ancient Debris Crabs would be the strongest, dealing the most amount of damage and tanking the most amount of health.

We spend a lot of times in caves in minecraft but they didn't get any new or exiting features since a long time, that's why I think a cave update is due !
Some ideas :
- Caves biomes of different types of caves depending on the biome it's generated into, for example : Ice caves, bats infested caves, lava caves, etc
- Stalagmite and Stalactite in caves, should be blocky, maybe like cobblestone walls
- More mushroms in thsoe caves?
- Mobs spawning only in caves?
There is a lot that could be done so that just some ideas, also the nether is a big caves, so it could be updated at the same time !
