With the way mushrooms have been changed, I go over in this very simple and somewhat short tutorial on how to create giant mushrooms with just bonemeal and some stone, in daylight.
There is a trick to growing Giant Mushrooms in daylight and that is that the light level has to be 12 or below. If the light level is 12 or below, you'll be able to plant and grow the giant mushroom if you have enough height above it.
I've seen people encase an area with whole above-ground (and man-made) caves just to create giant mushrooms, and I show you that it is not needed. All you need is a 5x5 stone platform about 8 blocks up from where you intend on planting your mushroom, in daylight.
From that point, all you have to do is plant it and use some bonemeal on it. You can yield anywhere from 10 to 15 extra mushrooms per each giant mushroom, so the main limiting factors are bonemeal and how many axes you have.
Keep in mind that in this giant mushroom farm tutorial, I'll go over the simplest way to create giant mushrooms and doing this, although not automated, is much faster than any automated farm.
