Chen is not much of a challenge against Rushdown chars but she has a boss mode that randomly activates on the 2nd round, meaning that you can actually defeat her before her boss mode beggins, you just need luck and to be fast since her AI kinda dies on the 2nd round (Probably because of her boss mode)
Her boss mode is actually very fun it has armor frames but she's very punishable if you manage to dodge her projectiles, and unlike other TH chars that you can only pass through projectiles for a limited time, here you can keep running forever and you will keep passing them because there's no "Limiter" for Chen's boss mode projectiles. Note that the amount of projectiles that she shoots depends on how much HP left she has, so low HP = More Projectiles.
And props for this Sub-Zero having a Run button, it really made her boss mode very easy not to mention his Running speed.
