Here is an advanced method of defeating the bone Giant in Chapter 7 on Master Ninja difficulty without taking damage using the Tonfas.

Strategy - Should the Bone Giant begin his spinning attack I dash through the first hit then immediately perform aimed jump into aerial FS followed by X or L1 then T once you land.

If you time it correctly you will evade his entire spinning attack and damage him in the process. Furthermore, I use either S S T T T or S S FT to land damage when he is standing around whiffing attacks.

If he stumbles and consequently falls on his arse, I stand near his arm and use the following combo to inflict the optimal punish S T (Hold) T, X or L1 S T.

This was demonstrated within the video itself to showcase how effective it is. Alternatively, you could shoot PV ninpo at his ribcage but it would be a waste of ninpo in my opinion.
